DUDES DISH: Rooftop Roundup

There is no better way to spend a beautiful summer day than grilling on the roof with a cold beer in hand.  Something about an open flame, expansive views, and sunshine makes me feel alive.  It doesn’t matter if I am cooking burgers, smoking ribs for over seven hours (yes, I did this and they turned out phenomenal) or just enjoying some homemade guac – there is really no way to lose. 

So if you’re also up for #winning, perhaps follow a few of these suggestions to enhance your rooftop experience.

Tools.

As much as I love to use my hands to cook, fire and human skin do not mix.  My suggestion – pick up a set of shiny stainless steel tools for the grill. 

All-metal skillets.

I don’t know about you but I like to get up early and enjoy the day.  The best way: by starting with breakfast on the roof. Huevos rancheros, anyone?

Some additional heat.

If it isn’t hot, I’m not eating it.  From steak to salsa (to just downing a tablespoon on a dare) hot sauce is a must. Give it the kiss of death.

NaCl.

Great food requires exceptional basic ingredients.  Red Hawaiian sea salt will bring the margaritas and the shrimp to the next level. 

Cigars.

This is the cherry on top, and is made even better when you can enjoy them without the tar and smoke.  The future is here and it’s electronic.

If you’ve done your day right, sit back and enjoy the sun’s curtain call.
