Easy (and healthy) Holiday Vegetarian Recipes

Hosting your first Christmas or New Year’s Gala? Congrats! Taking over holidays can be a blast, but catering to many different tastes can be challenging.

As a vegetarian myself, I always make sure to bring something that I can eat and enjoy, but that others will like, too. My carnivore husband is usually my taste-tester, so I know I’m making something that everyone will like. We host a traditional vegetarian, Polish Christmas Eve which is chock full of carbs and sweets, but our New Year’s Eve has flavor that won’t make you feel like you need a nap after.

Read on for some easy and healthy veggie-approved picks for your holiday gatherings!

My first recipe comes from my blog-pal and fellow D*Lish member, Tashina of Logical Harmony! Her Buffalo Cauliflower recipe is veg-friendly and DELICIOUS. Not to mention easy! I love how simple and versatile this dish is. These guys get crispy and delicious in just a short amount of time. Roast ’em up and serve them to your guests for a fun finger food before the entrees come out or for a night of apps!

I might be biased in my love of cauliflower, but this Cheesy Breadstick recipe is proof that the higher powers love us and want us to be happy! This is gluten free and low on the carb-count, and of course, vegetarian friendly, too! This gives me that comforting cheesy “bad” for you happiness that only a good appetizer can do. Try this and watch the crowd go wild!

For 4th of July, I made these Quinoa Pizza Bites from Somewhat Simple and I loved this recipe! These are easy, fun, and can be made vegan by using an egg substitute and vegan cheese (Daiya works well for this purpose). This appetizer cooks while you prep the remainder of your drinks and desserts and makes everyone happy to have pizza that won’t pack on the pounds. 

Any of these three vegetarian recipes will help you host a great gala without driving yourself crazy. The spicy, cheesy, comforting crunch of these apps will have everyone raving and wanting more.
